Grilled Pork Tenderloin with Mango Habanero Glaze
This BBQ pork tenderloin is fruity, light, bright and bold! The mango in the glaze imparts a citrus-like sweetness plus the jam paired with the orange juice adds just the right amount of acidity while the habanero hot sauce lends a fruity sweetness that complements the pork beautifully. Each slice is juicy, tender, full-flavored and the time spent on the grill adds some bitter char that balances the sweetness of the glaze. For the best result, frequently brush the pork tenderloin with glaze and avoid overcooking. Since pork tenderloin is fairly lean, overcooking renders the meat tough. Fortunately achieving tender pork is easy with the help of a hot grill and an instant-read thermometer. Once the pork is done, let it rest so it retains all its juices and serve with your favorite side. Try something fresh like an arugula salad, grilled brussels sprouts or an heirloom tomato salad simply dressed with a citrusy vinaigrette!
